No Bake Cheesecake


It is as simple as they come, no fancy ingredients or techniques involved to make this one…

INGREDIENT

  • 1½ cups Digestive Biscuits
  • 5 tbsp Brown Sugar
  • ½ tsp Cinnamon Powder
  • 2 tsp Lemon Juice
  • 2 cups Whipping Cream
  • 3 tablespoons Icing Sugar
  • 1 can Blueberry canned

METHOD

  1. In a small bowl, stir together the biscuits crumbs, brown sugar and cinnamon.
  2. Add melted butter and mix well. Press into the bottom of an 8 or 10-inch springform pan.
  3. Chill until firm.
  4. In a medium bowl, beat together the cream cheese and lemon juice until soft.
  5. Add the sugar and continue to beat until stiff. Pour into chilled crust, and top with pie filling.
  6. Chill several hours or overnight. Just before serving, remove the sides of the springform pan.
